What is espresso? Espresso \eh-SPREH-soh\ (noun) - Coffee brewed by forcing steam through finely ground darkly roasted coffee beans; a cup of espresso. The Process We learned from extensive training that making espresso is part art and part science. Unlike drip-brew coffee, authentic espresso, made and served fresh, delivers a burst of flavor that is alive and vibrant. A single espresso is made from 7 to 9 grams of ground coffee while a double espresso is made from 14 to 18 grams of ground coffee. The ideal process to extract the bean’s maximum flavor and aroma is to force hot water through freshly roasted and finely ground coffee beans. In order to deliver the perfect flavor profile, fresh water is heated to between 198 and 202 degrees Fahrenheit and forced through the grounds under high pressure at a rate of 18 to 24 seconds. The Bean The core of great espresso is the coffee bean. Most brands of coffee are stored in warehouses for long periods of time before being delivered. As coffee ages it loses its flavor and aroma. In fact, coffee is often old and stale by the time it arrives at supermarkets, restaurants or coffee shops. It often tastes bitter and needs plenty of sugar or cream to mask the taste. Our Coffee Is Different Really good coffee is made from beans that are roasted just before brewing. Just after roasting, coffee contains well over 900 flavor compounds to dazzle your taste buds. But they don't stick around forever. Like so many other aspects of coffee, and espresso in particular, good roasting is an art with a firm basis in science. Our beans are roasted to order right here in the Susquehanna Valley by Roaster Craftsman, Jay Schewnk, and delivered fresh. Freshly roasted coffee is naturally smooth tasting. In fact, the taste difference is dramatic. But don’t take our word for it. Taste the difference for yourself!
